Brussel sprouts are the healthiest vegetable rich in manganese, iron, potassium, fibre, choline, vitamin C and vitamin B, protein and omega-3 fatty acids. They are known to reduce the risk of developing heart diseases and cancer. They give a feeling of fullness, refrains you from overeating and are suitable for weight loss. But it is unfortunate to see people hating these tiny cute cabbages because of their limp texture and bitter flavour.

Boiling or steaming these tiny leafy buds make them sulphurous and unpleasant.  When cooked the right way these little green buds taste delicious.

Buying- This is an important step. Look for smaller Brussel sprouts as they taste sweeter than larger ones. Look for tender, bright green and heavy one. Make sure that the sprout heads are of the same size so that they will be cooked evenly. Get them fresh because they can be refrigerated only for a week and a half. Brussel sprouts should be stored unwashed in an airtight container.

Massage Brussel sprouts with oil- If you are planning to eat Brussel sprouts raw then massage them with oil to soften their leaves.

*You may experience gas and bloat of the stomach on eating raw Brussel sprouts as the sugar in them is difficult to digest. Once cooked, sugar in them become accessible to digest.

Cutting– Remove the hardened bottom stem and remove tough outer leaves. Cut each of the sprouts crosswise to separate the leaves into lettuce like thin pieces. This will release thiocyanates to some extent and lessen the bitterness.

Saute– Saute tiny cabbages with little olive oil in a pan. Sprinkle a half cup of brown sugar per pound Brussel sprouts. When sugar gets caramelised remove it from heat.

Roasting- To increase sweetness and bring out nuttiness roast them Brussel sprouts after massaging them with olive oil. Roast for 15 minutes in the oven at 400 degrees F.

Brussel Sprouts In Garlic butter

Smash 3 garlic cloves with a knife. Melt one and a half tablespoon butter and an equal amount of olive oil over medium heat in a medium skillet. When butter is foamy reduce the heat to medium and add smashed garlic and cook until brown. Add half cup Brussel sprouts that have been halved lengthwise and cook at medium heat for 10-15 minutes. Do not stir. Removes it from heat when Brussel sprouts are tender and top with freshly grated parmesan cheese.

Maple Roasted Brussel Sprouts With Bacon And Roasted Hazelnuts

Preheat oven to 375 degrees F. Massage 2 pounds Brussel sprouts with a teaspoon olive oil. Toss and keep aside. Now cook half cup of hazelnut and bacon in a medium skillet over medium heat for 4-5 minutes until bacon becomes crisp, and hazelnuts are slightly roasted. In a medium bowl transfer bacon and hazelnuts and keep aside.  Now add Brussel sprouts in the skillet and cook on medium flame. Drizzle maple syrup over sprouts and stir to distribute evenly. Cook for 5 minutes until caramelised. This is following by roasting Brussel sprouts in the oven for 30 minutes and then adding hazelnuts and bacon and again roasting for ten more minutes until sprouts are golden. Add salt and pepper to taste.
